These enzymes continuously degrade the quality of carrots.

Put these sliced carrots into the freezer and place them in the freezer. In this way, you can store them for 9 months. When you store these same carrots in a vacuum bag inside the deep freezer, then they can last for up to 12 months. 

Pickling:

  • Pickling is known as the best way for storing carrots properly. For this purpose immerse carrots in vinegar with other vegetables like cucumbers, peppers, and chilies.
  • Vinegar is used to slow down the growth of microorganisms because vinegar is an acetic acid solution with low pH.

Drying:

  • If you want to store carrots by drying procedure, then first of all wash and peel them
  • Slice them into 2 to 4 mm thick pieces  
  • Spread these sliced carrots in a food dehydrator. The temperature should be 55 degrees Celsius for approximately 10 hours.
  • If you have shredded carrots, then it will take 6 to 10 hours. You can store the dried carrots in a sealed container. Place this container into a dry and dark place.
  • You can also blend these flakes into fine powder. The dried carrots in the form of flakes and powder can be used in making many recipes such as soups, drinks, and casseroles.
